Fajitos with pork
Fajitos with pork is a recipe for a spicy Mexican appetizer, which consists of meat stew with vegetables, chili and a fresh salad. By tradition, all the ingredients are wrapped in a round cake made from unleavened dough made from wheat or corn flour - tortilla, which should not be confused with Spanish tortilla (scrambled eggs with vegetables). In Mexico, fajita is served separately - meat, sliced vegetables and tortillas, and you yourself collect your version of the dish. So that guests do not arbitrarily, I collect fajits myself, because if you do not control the process, there will be a bunch of chopped salad and not a crumb of meat stew on the table. Fajitos must be collected immediately before serving so that the cake is not soaked.

Ingredients for Pork Fajitos
- 4 tortillas (thin tortillas made from wheat flour);
- 400 g lean pork;
- 100 g onions;
- 2 cloves of garlic;
- 150 g of tomatoes;
- 2 pods of red chili;
- 3 g hot red pepper;
- 3 g smoked paprika;
- 20 ml of olive oil;
- 50 g of tomato puree;
- green lettuce leaves;
- salt, sugar, lemon.
A method of preparing fajitos with pork
Garlic cloves crush with a knife, peel, chop. Chop the onion head finely. In a frying pan we heat high-quality olive oil, throw onions, then garlic, add a small pinch of salt, and pass until transparent.

Cut the pulp of lean pork into thin and long sticks across the fibers. This dish is cooked quickly, so fatty pork will not work, it will taste bad.
We send meat to a frying pan to sautéed onion, fry for 4-5 minutes.

Cut the tomatoes into thin slices, add to the meat and onions. If you are not too lazy, you can peel them, but this is not necessary.

Now put the tomato puree, pour ground hot red pepper, smoked paprika and fresh chili pods. Chile cut in half, add along with the seeds - it's Mexican cuisine!

Pour to taste salt without additives, and to balance the taste, a small pinch of sugar, simmer all together for 10-12 minutes, remove from heat.

By the way, tortillas (tortillas) are very easy to cook at home. To do this, just mix three glasses of flour with a small piece of margarine, salt, baking powder and a glass of hot water. Knead the dough, roll out round cakes and bake them in a dry pan. Strong frying is not necessary, cook for about a minute on both sides! The cakes should be pale, with light brown spots.

Put the pork stew on the tortilla, pour abundantly in a thick sauce from the pan, add the chili pods.

We put the leaves of fresh salad, pour all together with freshly squeezed lemon juice, add a slice of lemon and immediately serve it to the table.

From the history. Fajita and burrita are the closest “relatives”, the only differences are in the way the ingredients are served and sliced. In the first case, the meat is cut into thin strips, which, in fact, gave the name to the dish. In Spanish, faja is a strip, as cowboys got pieces of meat that they cooked and wrapped in fresh corn tortillas.
