The beginning of summer is the time of fragrant, wholesome and tasty preparations from tea roses - the most popular edible flowers. The fragrance of a tea rose cannot be confused with other flowers. A sweet, delicate pink aroma attracts you to breathe it again and again, and not only smell, but also try! What we will do now by preparing a universal supply for the winter of tea roses - petals, grated with sugar.

Harvesting frayed petals is easier than jam, and without heat treatment, they retain more nutrients. And nature generously endowed them with a tea rose: the petals contain vitamins C, K, B1 and B3. Eat a little bit regularly - and your immunity will be strong, your ability to study - excellent, your mood - balanced, and the level of optimism - high!

Tea rose is a wonderful natural remedy for colds. Why buy medicine if, for sore throat and cough, you can hold a spoonful of sweet medicine in your mouth or make tea with roses, instead of brewing tea, taking rubbed petals? Rose is used for stomatitis and tonsillitis; "Delicious flower" will help cure thrush in children. And, of course, the supply of rose petals is very nice to eat just like that, for pleasure.

It can be added to tea or eaten slightly, like jam or honey; use as a filling for donuts and rolls. Let's stock up on the aroma and taste of Summer while the tea rose season lasts!

They bloom in late May - early June. Hurry up, because on hot days delicate flowers fly quickly around. It is best to collect a tea rose in clear weather at dawn - there is still no heat, bird chirping rings in the air, it is drunk with morning coolness and floral aroma ... And most importantly, the rose petals at this time of day are most fragrant and saturated with essential oils, so there are more taste and good.

It is believed that for tea rose blanks, it is better to take only varieties with pink petals. In fact, there are many other suitable varieties - apricot, beige, cream, raspberry; each with its own aroma - with notes of honey, lemon, peach ...

But still the most fragrant and delicious ones are pale pink flowers, from which essential oil, rose water, preserves, winter supplies and candied flowers are made to decorate cakes and desserts. I always take a soft pink variety. And what varieties of tea rose do you harvest?

Ingredients for Rose Petals in Sugar

1 liter jar of rose petals

  • 1 cup of sugar;
  • A few grains of citric acid.

Variant of proportions - For 500 g of petals

  • 1 kg of sugar;
  • A pinch of citric acid.

You will also need dry sterile jars with screw caps. It is better to pack the petals in a small container - up to 0.5 l, since the stock is very sweet and is eaten a little (unless you are going to make baking stuffed with roses).

The method of preparation of rose petals in sugar

Gathering the flowers, carefully tear off the petals from them and carefully sort them out, peeling off the sepals, leaves, and release the insects that accidentally fall back into the garden - let them live!

Rinse rose petals is not necessary. Pour them into an enameled bowl. Pour sugar there and add citric acid - it will help maintain a beautiful pink color. If you make supplies without citric acid, the petals become brown over time.

Rub the petals with sugar with clean, dry hands until they begin to secrete juice. As an option - you can grind the petals with a pestle in a mortar. Sometimes it is advised to use a technique such as a blender and a meat grinder to grind the petals to make it faster. But do not do this: when in contact with metal, the petals lose their useful properties. And then, why rush? In the dynamic rhythm of our days, it is useful and pleasant to sometimes slow down to relax and enjoy the moment. And rubbing the petals by hand is just such an activity that promotes relaxation.

Inhaling the aroma of roses, you tune in to a calm, peaceful mood, and for good reason - rose essential oils have a calming effect. And how nice it is to pour silky petals in your hands - it seems that the skin becomes softer from contact with them.

Grated petals fill the prepared jars. You do not need to tamp too much, but pack it up more tightly - then the petals will settle.

The frayed rose petals can be stored in the refrigerator, in a glass dish with sealed lids for a year - until the next pink season.
